Miso soup

Ingredients

  • 2 cups of water
  • 5 oz Tofu (preferably silken), gently cut tofu into small cubes
  • 2-3 scallions (green onions), finely cut
  • 1/2 teaspoon dashi powder
  • 1/2 tablespoon wakame dried seaweed
  • 1 tablespoon miso paste (ratio by water)
  • Optional
    • 1 teaspoon soy sauce
    • 1 teaspoon shaoxing wine

Process

  • Boil water in a pot with dashi powder, wakame seaweed, and tofu. Once boiled, switch to warm
  • Add green onions
  • Turn off the heat, add soy sauce and mix miso paste through a strainer until completely dissolved
  • Optionally add some shiitake mushrooms before turning the heat off. You can skip dashi powder if using mushrooms.
  • Finally season with salt and pepper to taste. Or even a hot sauce

Note: optionally soak wakame seaweed in cold water for a few minutes for it to expand. Then add after the soup has boiled
