Ingredients
- 2 cups of water
- 5 oz Tofu (preferably silken), gently cut tofu into small cubes
- 2-3 scallions (green onions), finely cut
- 1/2 teaspoon dashi powder
- 1/2 tablespoon wakame dried seaweed
- 1 tablespoon miso paste (ratio by water)
- Optional
- 1 teaspoon soy sauce
- 1 teaspoon shaoxing wine
Process
- Boil water in a pot with dashi powder, wakame seaweed, and tofu. Once boiled, switch to warm
- Add green onions
- Turn off the heat, add soy sauce and mix miso paste through a strainer until completely dissolved
- Optionally add some shiitake mushrooms before turning the heat off. You can skip dashi powder if using mushrooms.
- Finally season with salt and pepper to taste. Or even a hot sauce
Note: optionally soak wakame seaweed in cold water for a few minutes for it to expand. Then add after the soup has boiled
