Refreshing Shirazi Salad

Ingredients

  • Cucumber, chopped into small dice
  • Tomatoes, chopped into small dice
  • Onions, chopped into small dice
  • Extra virgin olive oil
  • Freshly squeezed lime or lemon juice
  • Salt
  • Black pepper
  • Dried mint

Optional Ingredients

  • Finely chopped fresh mint
  • Minced garlic cloves
  • Avocado
  • Sour grape juice (instead of lemon or lime juice)

Instructions

  1. Chop the cucumber, tomatoes, and onions into small dice and add them to a bowl.
  2. Season with extra virgin olive oil, freshly squeezed lime or lemon juice, salt, black pepper, and a generous sprinkle of dried mint.
  3. Toss until the ingredients are well combined.
  4. Serve it on a bed of hummus with some warm pita bread on the side.
