🥗 Mediterranean Orzo Pasta Salad

A light, fresh, and flavorful salad that's perfect for meal prep or a quick lunch on the go.

Ingredients

  • Orzo pasta
  • Cucumber, diced
  • Cherry tomatoes, halved
  • Red onion, finely chopped
  • Feta cheese, crumbled
  • Olive oil

Instructions

  1. Cook the Orzo: Prepare the orzo pasta according to the package instructions. Once cooked, drain and rinse under cold water to cool. Set aside.

  3. Combine Ingredients: In a large bowl, combine the cooked orzo, diced cucumber, cherry tomatoes, red onion, and crumbled feta cheese.

  4. Dress the Salad: Drizzle olive oil and lemon juice over the salad. Season with salt and pepper to taste.

  5. Toss and Serve: Gently toss all ingredients until well combined. Serve immediately or refrigerate for later use.
