🥗 Mediterranean Chickpea Salad
A fresh, vibrant, and protein-packed salad featuring chickpeas, crisp vegetables, and a zesty dressing. Perfect for a light meal or side dish.
Ingredients
- 1/2 red onion
- 4 mini cucumbers
- 1 cup Kalamata olives
- 1 cup cherry tomatoes
- 1 (15.5 oz) can chickpeas, drained and rinsed
- 1 block of feta cheese (or as much as desired)
- 1/4 cup chopped fresh parsley
Dressing
- 1/3 cup extra virgin olive oil
- 1 tablespoon rice vinegar
- Juice of 1 lemon
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Prepare the Dressing: In a mason jar, combine the olive oil, rice vinegar, lemon juice, oregano, salt, and black pepper. Secure the lid and shake well until emulsified.
