🥗 Fattoush Salad Recipe

A vibrant and flavorful Middle Eastern salad, perfect for Ramadan gatherings or as a refreshing side dish.

Ingredients

  • For the Salad:
  • 1 head of romaine lettuce, chopped
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 2 radishes, thinly sliced
  • 1/4 cup pomegranate seeds (optional)
  • 2 pieces of pita bread, toasted and broken into pieces

  • For the Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon pomegranate molasses
  • 1 garlic clove, minced
  • 1 teaspoon sumac
  • Salt and pepper to taste

Instructions

  1. Prepare the Dressing: In a small bowl, whisk together olive oil, lemon juice, pomegranate molasses, minced garlic, sumac, salt, and pepper until well combined.

  2. Assemble the Salad: In a large bowl, combine chopped romaine lettuce, cucumber, tomatoes, red onion, parsley, mint, radishes, and pomegranate seeds.

  3. Add Pita Chips: Just before serving, add the toasted pita pieces to the salad.

  4. Dress the Salad: Pour the dressing over the salad and toss gently to combine, ensuring all ingredients are well coated.

  5. Serve: Enjoy immediately as a refreshing side dish or light meal.

Notes

  • For extra crunch, you can fry the pita bread pieces instead of toasting them.
  • Adjust the amount of sumac and pomegranate molasses to taste.
  • This salad is best enjoyed fresh to maintain the crispness of the vegetables and pita chips.
