Creamy Herby Cucumber Salad

Ingredients

  • 1/4 cup whole milk Greek yogurt  
  • 1 tbsp vinegar
  • 1 tbsp olive oil
  • Thinly sliced shallots
  • Thinly sliced cucumber
  • A generous amount of chopped leafy herbs (examples include cilantro, mint, dill, parsley, tarragon, or basil)
  • Salt
  • Pepper

Instructions

  1. Whisk together the Greek yogurt, vinegar, and olive oil in a bowl.
  2. Season with salt and pepper to taste.
  3. Add thinly sliced shallots, thinly sliced cucumber, and chopped fresh herbs to the bowl.
  4. Mix gently until everything is coated in the dressing.

Storage

The salad is best enjoyed the day it is made but can be stored in the refrigerator for 4-5 days.
