Creamy Herby Cucumber Salad
Ingredients
- 1/4 cup whole milk Greek yogurt
- 1 tbsp vinegar
- 1 tbsp olive oil
- Thinly sliced shallots
- Thinly sliced cucumber
- A generous amount of chopped leafy herbs (examples include cilantro, mint, dill, parsley, tarragon, or basil)
- Salt
- Pepper
Instructions
- Whisk together the Greek yogurt, vinegar, and olive oil in a bowl.
- Season with salt and pepper to taste.
- Add thinly sliced shallots, thinly sliced cucumber, and chopped fresh herbs to the bowl.
- Mix gently until everything is coated in the dressing.
Storage
The salad is best enjoyed the day it is made but can be stored in the refrigerator for 4-5 days.
