Cowboy Caviar Recipe
A vibrant and flavorful salad that's perfect as a side dish or dip.
Ingredients
- 1 can black beans, drained and rinsed
- 1 can black-eyed peas, drained and rinsed
- 1 cup corn kernels (fresh, canned, or thawed from frozen)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, finely chopped
- 1–2 jalapeños, finely chopped (optional)
- 1–2 avocados, diced
- 1/4 cup chopped fresh cilantro
- Juice of 2 limes
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the black beans, black-eyed peas, corn, bell peppers, red onion, and jalapeños.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- Pour the dressing over the bean and vegetable mixture. Toss gently to combine.
- Fold in the diced avocados and chopped cilantro.
- Let the mixture sit for at least 15 minutes to let the flavors meld.
- Serve with tortilla chips or as a topping for grilled meats or salads.
Notes
