Cowboy Caviar Recipe

A vibrant and flavorful salad that's perfect as a side dish or dip.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can black-eyed peas, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or thawed from frozen)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1–2 jalapeños, finely chopped (optional)
  • 1–2 avocados, diced
  • 1/4 cup chopped fresh cilantro
  • Juice of 2 limes
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the black beans, black-eyed peas, corn, bell peppers, red onion, and jalapeños.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the bean and vegetable mixture. Toss gently to combine.
  4. Fold in the diced avocados and chopped cilantro.
  5. Let the mixture sit for at least 15 minutes to let the flavors meld.
  6. Serve with tortilla chips or as a topping for grilled meats or salads.

Notes

  • This dish is colorful, refreshing, and packed with nutrients.
  • Best enjoyed fresh, but can be refrigerated for up to 2 days.
