Korean pickled garlic

Ingredients

  • 2 pounds garlic cloves
  • 1 cup korean soy sauce
  • 1 cup rice vinegar
  • 1 cup rice cooking wine
  • 1/2 cup sugar

Process

  • Completely dry the garlic cloves before moving to next step
  • Make brine out of everything but garlic
  • Fill a clean jar with garlic cloves and brine. Make sure every clove is covered with brine
  • Let sit on room temperature for 2 days
  • Store in the fridge for 3 weeks. Make sure to turn the jar upside down once in a while to avoid molding.
  • Enjoy as a side dish with meat, dumplings, or noodles

Note: expect the flavor to be garlicky, savory, sweet, acidic, spicy and crunchy

Note: to take the spice out, boil the ginger cloves before putting them in the jar
