Hollandaise Sauce

Ingredients

  • 3 egg yolks
  • 1/2 cup hot melted butter (microwave for 1 minute)
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1 teaspoon dijon mustard (optional)
  • 1/8 teaspoon cayenne pepper (optional)

Process

  • Except the butter, blend your mixture really well (about 2-3 minutes) using an immersion blender.
  • While blending, start adding the hot butter slowly.

Note: the sauce should be silky smooth, and not broken.

Storage

While this sauce is best served fresh, you do have the option of reheating it.

Refrigerate in an air-tight container for up to 1 week. If it splits on reheating, emulsify it
